After an eight-year absence, one of Tampa Bay’s most beloved dining institutions is making a triumphant return. Ceviche Tapas Bar & Restaurant, the original trailblazer that introduced authentic Spanish tapas culture to the region back in 1997, will reopen in Summer 2026 at International Plaza and Bay Street.
The new location, set to debut in July 2026, will occupy 2223 N. Westshore Blvd. Operated by Caldeon Concepts (the team also behind Rococo Steak in St. Petersburg), this comeback promises to blend nostalgia with a sleek, contemporary upgrade while staying true to the vibrant spirit that made Ceviche a Tampa Bay staple for decades.
Guests can look forward to the restaurant’s signature shareable tapas, including classics like patatas bravas, hand-carved jamón ibérico, and fragrant paellas. Executive Chef Horasio Salgado will continue importing premium ingredients directly from Spain and incorporating cherished family recipes. The extensive wine list, long celebrated for its Spanish and international selections, will remain a centerpiece, perfectly paired with creative sangrias and cocktails.
What sets the new Ceviche apart is its elevated modern design. Local architect Brian Wolfe is reimagining the space as a sophisticated two-story destination featuring a large open bar, refined interiors, and inviting indoor-outdoor patio seating. The refreshed concept leans into a more contemporary aesthetic while preserving the lively, social energy that defines Spanish tapas dining — think lingering over small plates, lively conversation, and that unmistakable Barcelona-inspired joie de vivre.
Located in the heart of International Plaza’s Bay Street dining and shopping district, the new spot offers unmatched convenience and foot traffic. With over 170 upscale shops and restaurants nearby, it’s poised to become a go-to destination for date nights, girls’ nights out, business lunches, and pre-shopping indulgences. International Plaza’s Marketing & Sponsorship Director Julia Wyman noted, “Ceviche’s celebrated Spanish flavors and vibrant atmosphere will be a great addition to the variety of dining experiences offered by our Bay Street restaurants.”
For longtime Tampa diners, this return feels like a homecoming. After closing its original South Tampa location in 2018 and thriving in its current St. Petersburg home on Beach Drive, Ceviche is once again bringing its authentic Iberian charm to the west side of the bay.
